Blench the cauliflower in boiling salt water for 2 mum,drain and refresh under cold water

Make the batter, lightly whisk the egg yolks in a bowl,add 1tsp salt and some pepper,add the flour alternately with 200g water,whisk continuosly

Stir onion,garlic,spices and parsley in another bowl,whisk the egg whites until soft,fold half the egg whites through the batter mixture using metal spoon then fold in the rest

Heat the oil in a deep frying pan over medium-high heat,cook the fritters in batches,dip the cauliflower into the batter to coat then carefully drop into the hot oil(being careful not to overcrowd the pan)

Fry turning occasionally 2-3 min until the cauliflower browned all over remove and drain on kitchen paper

Serve with salsa sauce,garnish with parsley and also can serve with lemon wedges if u like
