Perfect fried rice everytime!

It’s so easy to end up with a gluggy or tasteless fried rice at home. ...Just how do you make that delicious fluffy fried rice at home can seem tricky.
There are a few things you must follow to get that perfect rice!
Must haves to perfect fried rice:
• Rice Must be dried and cold: make this the day before and place in a tray in the fridge to dry out
• Unless you have a commercial style wok gas jets to work with, do in batches. High heat is critical to non gluey fried rice
• be heaven handed with your flavours. Too often people make really bland fried rice. It’s solved just by adding a bit more soy sauce or fish sauce! Salt bring out the flavours!

Pre-cook steamed rice, cool down, spread evenly on a tray cover with clean tea towel leave in fridge over night.

In hot pan and oil make omelet and place aside

Fry off bacon- (you can use any other diced protein in here: chicken, steak, sausage, salami, prawns.) make sure pan stays hot and ‘fry’ protein. Do not stew. Put aside

Bring large pan to high heat with oil. Once smoking hot, fry off vegetable for couple minutes, and add rice. Dice omelette and add to mix- it’s super important to maintain a hot frying heat.

Add your flavours, soya sauce, tomato sauce, to taste. If still bland, add more soya sauce or salt.
