Ingredients

20 mins
  1. 6 tablespoonsolive oil
  2. 1/2 tablespoontarragon vinegar
  3. 1 teaspoontarragon or Dijon mustard
  4. 1small garlic clove, crushed
  5. 115 g (1 cup)French beans
  6. 12small new potatoes
  7. 4very small lettuces roughly chopped
  8. 200 gcanned tuna in oil, drained
  9. 6anchovy fillets, halve lengthways
  10. 12black olives stoned
  11. 4tomatoes chopped
  12. 4spring onions, finely chopped
  13. 1/2 teaspooncapers
  14. 2 tablespoonpine nuts
  15. 2hard-boiled eggs, chopped
  16. to tasteSalt and black pepper
  17. Crusty French bread to serve

Cooking Instructions

    Mix the oil, vinegar, mustard, garlic and seasoning in the base of a large salad bowl

    Cook the French beans and potatoes in separate pans of boiling salted water until just tender.

    Drain and add to the bowl with the lettuce, tuna, anchovies, olives, tomatoes, spring onions and capers

    Toasted pine nuts in a small frying pan until lightly browned just before serving

    Sprinkle them over the salad while still hot, add the eggs and toss all the ingredients together. Serve with chunks of hot French crusty bread
