Low calorie pie crust using Special K cereal as a base. 610 kcal Total. 76.25 kcal per serving.
Cooking Instructions

Preheat oven to 350 degrees.

Place the cereal in a plastic bag and seal. Use a rolling pin to crush the cereal into crumbs, turning and shaking the bag frequently to make a consistent crumb. You should have around 1 1/2 cups of crumbs when complete.

Pour brown sugar and water into a small bowl and stir until incorporated into a syrup.

Mix in melted butter and applesauce into the brown sugar syrup mix. Stir until blended.

Pour crumbs into a medium bowl stir in cinnamon or spice. Stir with a fork until well blended and evenly distributed.

Pour small bowl of wet mix into the crumby dry mix. Stir with a fork until well blended and evenly distributed.

Press the crumb mixture into a pie dish. It will not stick as well as a traditional graham cracker crust, just press gently.

Bake for 5 to 7 minutes, until set. Cool slightly, then fill as desired.

In late fall, my mother would visit our neighbors, the Geraks, and bring home a half bushel of apples from the apple trees in their backyard. I remember them as small, tart, and it took a lot of peeling and cutting to get enough to make a pie, but what wonderful pies they were. In Poland they serve a version of apple pie called Szarlotka.
