Always wanted to bake a mixed berry cake after a trip to a village bakery in Cork, Ireland. The mixed berry cake there was awesome. I referred to many recipes and came out with this eggless version and baked it on my mom's birthday.

Ingredients

1.5 cupflour
3/4 cupbrown sugar
1banana
80 gbutter
1/8 cupOlive oil
1/2 cupmilk
1 tspbaking powder
Mixed berries - I added strawberries, raspberries blackberries
1 tspVanilla extract
1 pinchsalt

Steps

Use a hand mixer to beat the butter and sugar until soft and fluffy

Add one mashed banana, Olive oil, milk, vanilla extract to the mix above

Mix flour, baking powder, salt together and add this dry mix in small batches to the above to make a smooth batter. Pour the batter onto a greased pan and arrange the mixed berries on top. Sprinkle some sugar on the berries.

Preheat the oven at 180° for ten minutes, and bake the cake batter at 180° for 15 minutes

Then reduce the temperature to 150° and further cook for 35 to 40 minutes.

Let the cake cool completely, serve with vanilla ice cream
