A comfort dinner for one recipe for my daughter who lives in Kyoto

1. In a bowl, mix all the ingredients for the seasoning mix. Stir well.

2. In a skillet, heat canola oil and sauté garlic and chili, followed by onion and red capsicum, and then minced chicken. Sauté well.

3. When the chicken is cooked, add the seasoning mix. Bring to boil until the liquid cook off. If it’s too dry, add a little bit of water. Add basil leaves in the chicken mixture and cook until wilted (not cooked too much).

1. Make a sunny-side-up egg.

1. Serve over rice, top with the egg.
