Position oven rack in upper third of oven and preheat to 450°. In a bowl, mix first 7 ingredients and 2 Tbsp thyme. In a large baking dish, arrange the chicken, potatoes and onion ina single layer; season with S&P. Add the cranberry mixture, pressing the cranberries to submerge. Layer the bacon slices on the chicken and roast for 30 minutes- or until internal temperature is 165°.

Garnish with the remaining 1 Tbsp thyme and serve with the bread.
