Peel, quarter (should be roughly the same size pieces) and boil potatoes in water with the 2 tbs kosher salt (any coarse salt will work). Test for doneness by poking a fork into potato - should feel no resistance. Drain potatoes when done to you satisfaction.

Add the rest of the ingredients to cooked potatoes and mash together with masher or mixer. Add more whipping cream to achieve desired texture.
