Classic French Crêpes yes, soft, delicious, and thin. Eat them as a sweet or savory option for breakfast, lunch, dinner or dessert.

Melt the butter in the microwave, and warm the milk to avoid lumps. Mix the flour, sugar, and salt in a big bowl.

Add the eggs in the middle, start stirring with a whisk to avoid lumps but no worries you’ll have some at the beginning. It’s normal. Add the melted butter, and progressively pour the milk. Try to avoid flour lumps as much as you can.

Once you have a fluid batter, with no flour left, let the batter rest for at least 30 minutes. ⏱ very important!

Put a pancake/crepe pan on the stove (10 inch pan). When the pan is hot (don’t put the heat too hot, otherwise you might quickly burn your crepes). Brush the surface with butter or oil.

Add the measured batter into the pan. Swirl the pan as you add the batter. Work quickly, to spread the batter evenly around the pan all the way to the edges, so that you have a smooth edge.

Wait for browning edges, before you flip over the crepe. 40-50 seconds. Make sure you don’t cook them more than that, which would make them dry or even burn them. We want them a bit crispy and slightly brown.

Serve them with whatever you want, as a snack, breakfast, lunch or even dinner (savory) or dessert. Yum 😋 Nutella, banana, coconut 🥥
