Crush the biscuits with a rolling pin and put in a bowl

Add the melted butter and mix

In a cake ring with a base place the crackers and butter at the base and flatten, place in the fridge to set

Attach the genoise sponge disk to the crackers base with the jam

Dissolve the gelatin in the water

Pass the cheese through a seive to make it fine then add the icing sugar

Mix the dissolved gelatin with the Yoghurt then pour it in the cream cheese mix well and add the lemon zest and the vanilla

Lastly fold in the whipped cream then pour the mixture into the mold and place into the fridge to set

When set you can garnish with the relevant thin fruit slices and then top with the jelly mirror

Ps this is around 20 cm, or 4 small molds
