Ingredients

  • 140 gmsdark chocolate
  • 140 gmsbutter
  • 115 gmscaster sugar
  • 5eggs separated
  • 55 gmsflour
  • for the icing
  • 6 tbsapricot jam
  • 140 gmschocolate
  • 200 mlcream
  • 25 gmsmilk chocolate

Steps

    Preheat oven and prep baking tin

  2. 2

    Melt the chocolate gently in a double broiler and cool, beat the butter until very soft add sugar beat till fluffy add cooled chocolate,vanilla and whisk add the egg yolks and fold in seived flour

  3. 3

    In a separate bowl whisk the egg whites until stiff but not dry, add 1/3 to the choco mixture and stir vigorously, then gently fold in the remaining whites

  4. 4

    Bake for 45-50 mins till springs back cool.

  5. 5

    To make topping warm jam in a small pan and brush evenly over the cake allow to set.

  6. 6

    Heat the cream until piping hot add chocolate and mix till melted and cool to piping consistency spread on top of the cake

  7. 7

    Take the milk chocolate and melt pipe sacher and let set
