Preheat the oven 400 degrees Fahrenheit

Heat an oven safe skillet.

Coat the chops with olive oil and coat the chops with the salt heavily and lightly with the pepper.

Sear the chops for 2 minutes per side.

Don't forget to sear the edges.

Put into the hot oven for 15 minutes or till the center is 145 degrees Fahrenheit.

Let rest 10 minutes.

Add flour to the drippings in the pan and cook till the flour is cooked through.

Add the broth and deglaze the pan and stir till smooth.

Should just have a coating on a spoon.
