Ingredients

2 servings
  • 100 gPrawns
  • 1/2 tablespoonOil
  • Salt & Pepper
  • 2Eggs *lightly whisked
  • 1 tablespoonOil
  • Cooked Rice 2 servings *about 360g, warmed
  • 2-3Spring Onion *finely chopped
  • 1/2 teaspoonSalt
  • 1 teaspoonSoy Sauce
  • 2Lettuce Leaves *torn into small pieces

Steps

  1. 1

    Add small mount of Oil to the heated frying pan or wok over medium high heat, cook Prawns until cooked through. Season with Salt & Pepper and transfer to a plate.

  2. 2

    Add extra 1 tablespoon Oil, cook Eggs, add warmed Cooked Rice and Spring Onion, and return the cooked Prawns, and stir-fry for a few minutes. Season with Salt and Soy Sauce, then add Lettuce. Mix well to combine.
