Curried Goat with Parsley Pea Rice

Ingredients

  1. Goat---------------------
  2. 2-1/2 poundgoat bone in
  3. 2 teaspooncurry powder
  4. 2medium onion sliced
  5. 1 cupcarrots sliced on a bias
  6. 1 teaspoonallspice
  7. 3/4 teaspoonground cumin
  8. 1/2 teaspoonground cinnamon
  9. 1 teaspoonkosher salt
  10. 1 teaspoonground black pepper
  11. 1 teaspoongranulated garlic powder
  12. 2 tablespoonsextra Virgin olive oil
  13. 1-1/2 cupwater
  14. 1/4 cupwater
  15. 2 teaspooncornstarch
  16. Rice-------------------------------
  17. 1 cupEnglish peas frozen
  18. 2 cupmedium grain rice
  19. 1/4 cupparsley
  20. 1 teaspoonkosher salt
  21. 4-1/2 cupwater
  22. 2 tablespoonsextra Virgin olive oil

Cooking Instructions

  1. 1

    Heat the oil in a pan and heat the oil in a pot one for rice one for goat. Add the rice to the pot and stir till the rice turns off color more white. Add 4 cup of water cook 10 minutes covered. Add the peas and parsley. Add half cup of water stir. Cover bring to boil turn off heat covered and undisturbed for 15-20 minutes.

    Rinse the goat and pat dry.

    Slice the onion and add to the hot oil.

    Add the goat to the pan of hot oil. Add the spices and stir good.

  5. 5

    The spices are added add the water and simmer for 15 minutes covered.

    Cut the carrots on a bias. Add the carrots. Simmer 30 minutes covered.

    Add to the goat, the mix of the cornstarch and water and Add to the goat and stir constantly till thickened.

    It's ready to be served with the rice. I hope you enjoy!!
