To make it, boil two peeled and sliced potatoes and half a head of cauliflower. Meanwhile, boil two tomatoes with a cross cut on the skin to peel them easily, along with a piece of onion and a clove of garlic. Remove, peel, and blend them in a blender, then pour into a small pot and season with 1 teaspoon of bouillon powder. Set the sauce aside.

Prepare a light béchamel: heat half a stick of butter with a tablespoon of chopped onion, add a large tablespoon of flour and stir well without burning, just to remove the raw taste. Gradually add milk while stirring constantly to avoid lumps. Season with a teaspoon of bouillon powder, nutmeg, and pepper. Set aside.

You can add sliced and sautéed mushrooms with chopped garlic and salt. If you don't add mushrooms, still include the chopped garlic with olive oil. Assemble the dish: place the tomato sauce at the bottom, then the peeled and sliced potatoes, followed by the sliced cauliflower, the mushrooms with garlic, and cover everything with the béchamel. Finally, sprinkle grated cheese on top and bake.
