Orange cake with runny icing #authormarathon

Sift flour and baking powder into a bowl.

Add in sugar and salt. Mix in a fold-in motion.

Create a well in the middle, add in the eggs, vanilla essence, yogurt and vegetable oil. Fold in gently.

Add the lemon zest. Fold in.

Preheat oven to 150 degrees centigrade for 5-7 minutes.

Line a baking tin with grease proof paper or improvise with some homemade "pan release" - just mix shortening and flour in equal proportions and use this to line the baking tin.

Pour in the cake mix and put in the oven (middle part of the oven) and leave to bake for about 40 minutes. Use a tooth pick to check if cake is done. You can add time if the cake is not done.

For the runny icing. Mix icing sugar with some freshly squeezed orange juice. Mix nicely and just pour on the cake after it cools. Sprinkle anything you want on top, chocolate chips, coconut... Feel free.
