Dry roast 1 cup health mix flour/ sathumaavu in low flame.
Roast until aroma is released but without any discoloration.

Roasted flour is ready. Remove from the heat. Cool completely.

Get the required ingredients to prepare the dough.

Add a pinch of salt to the cooled flour.

Add 2 tablespoons desi ghee.

Combine flour and ghee until flour looks moist to hold shapes at the same time easy to break.

Add 2 tablespoons yogurt.

Gather the ingredients into Jamun dough consistency. Don’t knead. Grease with a teaspoon ghee.

Cover and rest the greased dough for 15 minutes.

Meantime, let’s prepare jaggery syrup. Add 1 cup crushed jaggery to a pan.

Pour 1 cup water. Stir and cook in medium heat until jaggery dissolves completely.

Just Boil syrup until thick. Add teaspoon of cardamom powder. Remove from the heat.

Divide dough into equal sized balls. Press each ball gently between the palms. Print in center with a forefinger.

Heat oil for deep frying in a wok. Gently drop Badushas in the medium hot oil.

Flip and fry both the sides until golden brown. Take badushas out, drain excess oil and drop into warm jaggery syrup. Let badushas sit in the syrup for 10minutes.

Keep flipping in between for better sweet absorption. After 10 minutes, take Badushas out. Garnish with sliced pistachios.

My Tip:
Health mix can withstand very little moisture and I didn’t use any additional liquid apart from ghee and yogurt while preparing the dough. While shaping badushas, be really very gentle as the dough is too light to handle. Tends to break easily. Before frying Badushas, make sure the oil is medium hot. Drop two baudshas and immediately Keep pushing hot oil on the badushas to avoid badushas breaking while frying.
