I want to write the title in English too but it doesn't fit 😅. Kembung is from ikan kembung which means mackarel and sambal korek means "lighter" sambal. Why is it called like that? Because it is so hot it makes you feel you were burned by lighter.

Anyway, it is good to be eaten with a plate of hot rice 👌 hope you give this recipe a try.

Ingredients

  • 500 gramsmackarels
  • Oil for deep drying
  • 100 gramsbirdeye chillies
  • 4 clovesgarlic
  • 1lime
  • Salt
  • Pepper

Steps

15 minutes
  1. 1

    Clean the mackarels. Marinate with some lime juice and salt and peppers. Set aside.

  2. 2

    Deep fry the mackarels until gorlden brown. Shred the meat.

  3. 3

    Clean the chillies and garlics. Then put them in a traditional stone pestle. Mash them roughly. Not too smooth.

  4. 4

    Heat some oil in a frying pan. After it is boiling hot. Take it off the heat and put them over the chillies and garlics. Let them cook from the heat of the oil. Let it sit.

  5. 5

    Then, stir the chilli and garlic mixture add in the shredded fish. Mix mix. Add in salt and pepper. Mix again.

  6. 6

    Serve.
