Cut the fish tofu into cubes and set aside.

Soak the rice noodles in water until they soften, then drain and set aside.

To make the sauce, combine all the sauce ingredients in a saucepan. Heat and stir until dissolved, then set aside.

Heat the vegetable oil in a pan. Add the chopped shallots and fish tofu, and stir-fry until golden. Add the shrimp and stir-fry until they start to turn pink. Pour in half of the sauce and stir to combine.

Add the softened rice noodles to the pan. Pour in the remaining sauce, then add the bean sprouts and green onion. Stir-fry everything together.

Crack an egg into the pan and stir-fry until everything is well mixed and the egg is cooked through.

Your Pad Thai is ready to serve!
