Ingredients

  • 6shrimp, peeled and deveined
  • 10 piecesfish tofu, cut into cubes
  • 1 handfulthin rice noodles
  • 1 cupraw bean sprouts
  • 1 tablespoonchopped shallots
  • 1 stalkgreen onion (use instead of garlic chives)
  • 4 tablespoonsvegetable oil
  • Sauce ingredients:
  • 2 tablespoonspalm sugar
  • 1 tablespoonfish sauce
  • 1 tablespoonlight soy sauce
  • 3 tablespoonsoyster sauce
  • 7 tablespoonstamarind paste
  • 1 teaspoonsalt

Steps

    Cut the fish tofu into cubes and set aside.

    Soak the rice noodles in water until they soften, then drain and set aside.

  3. 3

    To make the sauce, combine all the sauce ingredients in a saucepan. Heat and stir until dissolved, then set aside.

  4. 4

    Heat the vegetable oil in a pan. Add the chopped shallots and fish tofu, and stir-fry until golden. Add the shrimp and stir-fry until they start to turn pink. Pour in half of the sauce and stir to combine.

  5. 5

    Add the softened rice noodles to the pan. Pour in the remaining sauce, then add the bean sprouts and green onion. Stir-fry everything together.

  6. 6

    Crack an egg into the pan and stir-fry until everything is well mixed and the egg is cooked through.

  7. 7

    Your Pad Thai is ready to serve!
