This is a recipe I put my personal spin on the authentic kimpira recipe, which commonly calls for gobo, or burdock root. 
In place of that flavourful, crunchy vegetable which is rather rarely found outside Japan, I use celery and bell peppers instead. Celery adds great flavour and pleasant texture to the dish, while bell peppers enhance the mellow sweetness of kimpira sauce.

For those who are new to kimpira, it is a technique to saute and simmer vegetables seasoned with caramelised soy sauce. It is with no boubt the most popular dish amongst all the Japanese homey treats.

Ingredients

  1. 50 gcelery stalks, thinly sliced
  2. 100 gbell peppers, thinly sliced
  3. 1 Tbspsesame oil
  4. 1/2 Tbspsoy sauce
  5. 1/2 Tbspmaple syrup
  6. 1anchovy fillet
  7. sesame seeds to garnish

Steps

  1. 1

    Place sesame oil in a skillet and add anchovy. Warm the oil and slowly cook it until the fillet dissolves into small pieces.

  2. 2

    Add celery and bell pepper and stairfry them for a few munites.

  3. 3

    Add maple syrup and soy sauce and simmer until the liquid to evaporate.

  4. 4

    Sprinkle sesame seeds to garnish.
