Ingredients

  1. 6thin chicken breasts
  2. 1 containergreen onion cream cheese, softened
  3. 1/4 cupolive oil
  4. 1/2 cupchicken broth
  5. 1large package sliced mushrooms
  6. 1 small bagfresh baby spinach
  7. pinchgarlic
  8. pinchpepper
  9. 1-2 cupsshredded mozzarella depending on your cheesy preference

Cooking Instructions

    In a 9x13 pan lay chicken flat. Top with spinach and mushrooms.

    Mix softened cream cheese, oil and chicken broth with a wisk and pour over top.

  3. 3

    Lay a piece of foil over top but do not seal. Cook at 375° for 20 minutes. Remove foil and bake for another 20 -25 minutes. Sprinkle with the mozzarella cheese and cook an additional 10 minutes until starts to brown.

    Remove from oven and let sit 10 minutes before serving.

I have made this regularly at home since I saw the recipe shared on FB Nov, 2019. We loooove it! I use these products in the recipe instead of green onion cream cheese and chicken broth since this is what I had on hand first time making-and I’ve kept it this way over time:Vegetable Cream Cheese (Philadelphia or Great Value)Orrington Farms Beef Broth Base&Seasoning (delicious with this recipe!!)I also add a tablespoon of jarred minced garlic in the mix.Thank you for this recipe!
