Ingredients

  • 450 grrice, rinse and drain
  • 3garlic cloves, minced
  • 3shallots, finely chopped
  • 2 tspturmeric powder
  • 1/2 tspgrated ginger
  • 1/2 tspcoriander powder
  • 1 tspsalt
  • 2bay leaves
  • 2kaffir lime leaves
  • 1lemongrass, white part only, bruised
  • 225 grthick coconut milk
  • 370 mlwater
  • 1/2 tsplemon juice (optional), used to brightened the yellow color

Steps

  1. 1

    Put all ingredients into the rice cooker. Stir until well blended. Press the "cook" button.

  2. 2

    After it's cooked, fluff it around then close the lid. Let it set in "warm" for 5-10 minutes. Serve it warm as side dish.
