The defining of a ketoprak is the use of vermicil and most of the salad ingredients are cooked.

Ingredients

  1. 2 blockfirm tofu, drained and cut into 2 inch chunks
  2. 100 grambean sprouts
  3. 200 gramvermicelli, soaked in cold water until soft
  4. Steamed rice cake - you can buy rice boil in the bag from supermarket and follow the steps on the packaging
  5. Peanut Sauce :
  6. 100 grampeanut with skin on
  7. 5 clovesgarlic
  8. 5Thai chilies
  9. 1 tablespoonspalm sugar
  10. 1 teaspoonsalt
  11. 175-200 mlwarm water
  12. Garnishes :
  13. Sweet soy sauce
  14. Fried shallots
  15. Crackers

Steps

  1. 1

    Heat enough oil in a pot for deep frying.

  2. 2

    Deep fry peanut until a shade darker.

  3. 3

    Deep fry tofu until lightly golden brown.

  4. 4

    Boil a pot of water and blanch bean sprouts for 2 minutes. Remove the water and set aside.

  5. 5

    Peanut sauce : Grind peanut, garlic, chilies, palm sugar and salt until becoming a thick paste. Add water and mix well.

  6. 6

    Assembling : in a large serving plate, place steamed rice cake, vermicelli, bean sprouts and fried tofu. Pour the sauce over and garnish with fried shallots, a drizzle of sweet soy sauce, crackers and mix well.
