Ingredients

  1. बैंगन लम्बे कलिंजी वाले --250 ग्राम
  2. आलू --2-3
  3. सरसों तेल --50ग्राम
  4. मेथी --1/2टी स्पून
  5. लहसुन --10-15कली
  6. हल्दी पाउडर --1/2टी स्पून
  7. धनिया पाउडर --2टी स्पून
  8. लाल मिर्ची पाउडर --1टी स्पून
  9. हींग --2से 3 चुटकी
  10. कलोंजी मसाला --2टेबल स्पून
  11. अमचूर पाउडर --1 टी स्पून
  12. नमक स्वाद से या 1se1/2टी स्पून

Steps

  1. 1

    अब इसमें हल्दी दाल कर आलू बैगन को धो के दाल दे लाल मिर्ची धनिया पाउडर और कलोंजी मसाला दाल कर 2-3मिनट चला लेंगे अब इसमें नमक मिला के थोड़ा सब पानी दाल के ढक के पकने देंगे !गैस की आँचल धीमी करके बनाये !

    बैंगन को लम्बे काट ले आलू को भी छील कर लम्बे लम्बे काट ले, लहसुन को भी छील कर बारीक़ काट लेंगे !

    अब लोहे की कढ़ाई को गरम करें उसमे तेल डालेंगे, तेल गरम हो जाये तब मेथी देना डाले मेथी चटक जाये तब लहसुन दाल कर सुनहरा भून ले और हींग डालेंगे !

    थोड़ी देर बाद ढकन हटा के सब्जी को चला ले और धीमी आँच मेँ पकने तक पकाये, सब्जी बन जाये तब अमचूर डाल के चला कर गैस बंद कर दे !🙏🙏🙏
