Craving beef stew, but since our family has stopped eating red meat, I made a vegetarian beef stew pho to satisfy the craving. 😆

Today is the first day of the month—anyone cooking vegetarian at home?
Craving beef stew, but since our family has stopped eating red meat, I made a vegetarian beef stew pho to satisfy the craving. 😆
Steps
- 1
Soak the vegetarian beef slices in water before cooking.
- 2
Bring water to a boil and cook the pho noodles.
- 3
Prepare the vegetables and cut them into bite-sized pieces.
- 4
Sauté garlic and chili until fragrant, then add to a pot with seasonings. I use pre-mixed beef stew seasoning from the store, which includes cardamom, cinnamon, cloves, star anise, annatto seeds, fennel, etc., but you’ll need to adjust the seasoning to taste.
- 5
Briefly stir-fry the ingredients, then add 8 1/2 cups water (2 liters) and cook until the vegetables are tender. Adjust seasoning as needed.
- 6
Add the pho noodles and broth to a bowl. Serve and enjoy.
