My son and I are so fond of Briyani and I make a point to cook briyani once a week. This is a simple easy to cook dish that can be served with plain raita or along with chicken curry.

My son and I are so fond of Briyani and I make a point to cook briyani once a week. This is a simple easy to cook dish that can be served with plain raita or along with chicken curry.

Soak rice for an hour. Marinate chicken with curd with lil chilli powder,, turmeric powder and lil ginger garlic paste overnight or for leasy 2 to 3 hours so that chicken is flavourful.

Add oil once heated add tej patta, bay leaves and star arnise. Once it crackles add onions and fry till it's golden brown. Add ginger garlic paste and fry till raw smell is gone.

Add tomatoes and fry till it's nicely cooked. Add the spice powder to it, now Add the marinated chicken to it. Mix well and add handful of mint and coriander leaves to it. Once it's nicely mixed add rice, water and requited amt of salt and close the lid.

Cook for 2 whistles. Once the pressure is out. Add lemon juice, ghee, fried onions and mint leaves as garnish and serve with raita.
