Butter Chicken Curry
My family's favorite chicken curry. Goes well with Basmati Rice, Naan or Roti.

Get the chicken ready. Cut the chicken into medium pieces. Put the pan on a medium heat add 2tbsp of butter once the butter starts to melt add finely chopped onion. Saute onion till its translucent. add 1/2 tbsp ginger garlic paste.add 1/4th tsp turmeric pwd. Saute the paste for a minute and then add chicken pcs close the lid and cook till chicken is cooked 90%.

To make Gravy :- In a pan add roughly chopped onion, remaining ginger garlic paste, cinnamon, cloves, cardamon, cashews, almonds. Saute everything for a minute. Now add tomatoes saute for another minute. Add 1/4th cup water to pan let it come to boil. Switch off stove and let the mixture cool off completely. Put the mixture into a blender and blend to a fine paste. The gravy is ready.

Final step cooking chicken and gravy together :- In a pan add remaining butter melt the butter add the gravy into the pan on a medium heat.add water to get right consistency. Add chilli pwd, coariander pwd and garam masala. Mix everything together. Close the lid and let it boil on low heat. Open the lid add water to get desired gravy consistency add salt, sugar and tomato ketchup. Once again close the lid and cook for another 5-6 mins. Mixing in between.

Add half and half or cream cook for a min or two. Switch of the stove garnish with coariander leaves in the end.
