Ingredients

  1. For The Chole
  2. 1 cupsoaked white chickpeas
  3. 2cloves
  4. 1 inch cinnamon
  5. 1bay leaf
  6. 4peppercorns
  7. 1 tbspoil
  8. 1/2 cupchopped onion
  9. 1 tspcoriander powder
  10. 1 tspcumin powder
  11. 2 tspchilli powder
  12. 2 tspdried mango powder
  13. 1 tspgaram masala
  14. 1/2 cuptomato puree
  15. 1/2 tsppepper powder
  16. 1/2 tspsalt
  17. For The Tikkis
  18. 1 1/2 cupboiled raw banana
  19. 1/2 cupboiled green peas
  20. 2 tspoil
  21. 1 tspcumin seeds
  22. 1/2 tspnigella seeds
  23. 2 tspfinely chopped green chillies
  24. 1 tbspfinely chopped coriander
  25. 1/2 tspturmeric powder
  26. 1 tbspcornflour
  27. 1/2 tspsalt
  28. 1/4 cupcornflour to roll the tikkis
  29. 1 tspdried mango powder
  30. 2 tspoil for greasing and cooking
  31. Other Ingredients
  32. 1/2 cupwhisked curd
  33. 5 tspgreen chutney
  34. 5 tbspsweet chutney
  35. 2 tbspchopped coriander
  36. 2 tbspchat masala
  37. 1/2 cupchopped onion

Steps

  1. 1

    For the chole
    Boil the chickpeas with salt, cloves, cinnamon, bay leaf and peppercorns till cooked
    Heat oil in a kadhai and add the onions and sauté for 1 to 2 minutes.

    Add the coriander-cumin powder, chilli powder, dried mango powder, garam masala and mix well.

  3. 3

    Add tomato puree, kabuli chana, salt, and pepper, mix well and cook for 2 to 3 minutes, add 1 1/2 cups water and lightly mash it with a potato masher once in between.

  4. 4

    Cook for 15 minutes or till the chickpeas is cooked. Keep aside.
    For the tikkis

  5. 5

    Heat oil in a pan and add the cumin seeds and nigella seeds.
    When the seeds crackle, add the green chillies and sauté on a medium flame for a few seconds

  6. 6

    Transfer the tempering into a deep bowl, add all the remaining ingredients and mix well.
    Divide the mixture into 10 equal portions and roll round flat tikki

  7. 7

    Heat a non-stick pan, grease it with a little oil, place the tikkis on it and cook till they turn golden brown in colour from both the sides. Keep aside.

    Place 2 tikkis on a serving plate and spread a portion of the chole evenly over it.
    Spread 2 tbsp curds, 1 tsp green chutney, and 1 tbsp sweet chutney.
    Add onion, coriander and a pinch of chat masala and serve.
