‘Harusame Salad’ is one of my family’s favourite summer dishes. I have been making the same ‘Harusame Salad’ for decades. This summer, I created a new version with Thai dressing, that has a nice flavour with citrus juice. The salad is so refreshing and definitely another summer favourite for us.

Ingredients

2 to 3 servings
  • 100 gHarusame Noodles (Bean Thread Noodles)
  • 100 gPork *thinly sliced
  • 6Prawns
  • 150-200 gSalad Vegetables *thinly sliced into strips
  • *This time I used Cucumber, Lettuce, Capsicum, Cherry Tomatoes, Carrot, Red Onion and Coriander
  • 2Spring Onions *finely chopped
  • Coriander Leaves for garnish *optional
  • <Dressing Ingredients>
  • 2 tablespoonsLime / Lemon Juice
  • 2 tablespoonsFish Sauce
  • 1 tablespoonBrown Sugar
  • 1 teaspoonsChilli Garlic Sauce *Or Fresh Garlic & Chilli

Steps

  1. 1

    Combine all the dressing ingredients in a small bowl.

  2. 2

    Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5-10cm.

  3. 3

    Cook Pork and Prawns in a frying pan. No seasoning is required. *Note: They can be boiled with Harusame Noodles if you like.

  4. 4

    Place everything into a large mixing bowl, add the dressing and mix to combine well. Sprinkle with finely chopped Spring Onions and serve immediately.
