Harusame Salad with Thai Dressing

‘Harusame Salad’ is one of my family’s favourite summer dishes. I have been making the same ‘Harusame Salad’ for decades. This summer, I created a new version with Thai dressing, that has a nice flavour with citrus juice. The salad is so refreshing and definitely another summer favourite for us.
Harusame Salad with Thai Dressing

Combine all the dressing ingredients in a small bowl.

Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5-10cm.

Cook Pork and Prawns in a frying pan. No seasoning is required. *Note: They can be boiled with Harusame Noodles if you like.

Place everything into a large mixing bowl, add the dressing and mix to combine well. Sprinkle with finely chopped Spring Onions and serve immediately.
