Ingredients

  • Mix of squash and root vegetables such carrots and parsnips, chopped into batons/ wedges
  • 1 tbspmaple syrup - or runny honey if you’re not vegan
  • 1 tspcumin seeds
  • 1/2 tspsalt
  • 2 tbspolive oil
  • 1/3 cuphazelnuts, without the skin on
  • 1-2 tspza’atar
  • Parsley leaves, chopped
  • 1 squeezelemon juice

Steps

  1. 1

    Preheat oven to 180C.

  2. 2

    Mix the honey, oil, cumin and salt in a bowl and add the vegetables. Make sure everything’s coated.

    Place on a lined roasting tray and roast for 20 - 25 minutes.

    Add the hazelnuts and then roast for another 10 minutes.

    Take out the oven and mix in the za’atar and parsley. Squeeze some lemon juice into the mix.

    Enjoy 😋
