Ingredients

  1. Mix of squash and root vegetables such carrots and parsnips, chopped into batons/ wedges
  2. 1 tbspmaple syrup - or runny honey if you’re not vegan
  3. 1 tspcumin seeds
  4. 1/2 tspsalt
  5. 2 tbspolive oil
  6. 1/3 cuphazelnuts, without the skin on
  7. 1-2 tspza’atar
  8. Parsley leaves, chopped
  9. 1 squeezelemon juice

Cooking Instructions

    Preheat oven to 180C.

  2. 2

    Mix the honey, oil, cumin and salt in a bowl and add the vegetables. Make sure everything’s coated.

    Place on a lined roasting tray and roast for 20 - 25 minutes.

  4. 4

    Add the hazelnuts and then roast for another 10 minutes.

  5. 5

    Take out the oven and mix in the za’atar and parsley. Squeeze some lemon juice into the mix.
