Phirni is a rich creamy rice pudding and very popular North Indian dessert served chilled preferably in small earthen bowls and topped with nuts on special occasions like Diwali, Eid etc.

Soak rice in little water for an hour and grind to a coarse paste like semolina.Soak this rice powder in little cold milk.Boil milk in a non stick pan and add the rice paste while the milk is boiling.Stir continuously so that no lumps are formed.Gradually add the sweetened milkmaid. If needed add little sugar.When the mixture thickens add the chopped nuts.Sprinkle rose water and few strands of saffron soaked in warm milk.

Serve chilled topped with chopped nuts preferably in small earthen bowls.
