Egusi Soup

Perfecting my Grainy egusi soup skill... we ate this with hot Semovita. #abuja
Steps

Wash the stock fish very well and put in a clean pot.

Pound pepper and three quarters of the Onion and pour over Stockfish. Add water and set on fire.

Add in stock cubes, spices and.P.oil. Cover pot. Allow to boil, 10mins.

In a clean bowl, pour in egusi. Get remaining Onion and chop into tiny bits and add to egusi. Add a pinch of salt and few drops of water. Mix very well to form a mold.

Open pot as stock is boiling and add in egusi mold. Use cooking spoon to mash and scatter egusi mold. It'll become grainy.

Add in fried fish and allow egusi to cook. 10mins

Add in Ugu leaves, mix to incorporate, being careful not to get the fish scattered. Allow to simmer, 3mins and put off heat.
