  2. 4eggs
  3. 1/2 literoil for frying
  4. 1/4 tspsalt
  5. 2 cupswater
  6. 1 tablespoonsugar
  7. 1/2 cupleftover onion sauce

    Peel and wash yam. Season with salt and sugar and deep fry for 5 mins Put in colanda/ basket to strain excesss oil

    Break eggs add salt to taste,add cubed onion, whisk.put oil in fry pan add onion and when hot add whisked egg and fry till brown on both sides. Microwave leftover onion sauce and serve with yam and egg. Enjoy
