Baked Handvo.. one dish meal..which is cripsy from outside and soft from inside..delicious low calorie sauvory. Aromat green peas- coconut mixture is sandwiched between mashed purple yam and mashed potatoes mixture..with tempering of cummin seeds and sesame seeds in 1 tbsp oil..& baked in oven... making it more nutritious healthy snack.
Good for serving as evening snack,for small party.

In mash Kand(purple yam) add 2 tbsp corn flour and salt to taste..mix and make to smooth dough.. keep aside. In mashed potatoes add 2 tbsp corn flour, and salt to taste mix well and make smooth dough.. keep aside.

Grind coarsely parboiled fresh green peas...in it add all mentioned ingredients. Mix the mixture and keep aside.

Grease oven proof square bowl..with ghee. Spread prepared purple yam mixture as shown.

On it spread green peas mixture..as shown.

On it spread mashed potatoes mixture..as shown.

Heat oil in small tempering pan,add cummin seeds and sesame seeds..saute for 30 secs..pour on prepared above bowl.

Bake in preheated oven for 25-30 mins on 250C..or till upper crust is golden brown in colour...nice baked aroma comes out.

Cool for 5 mins..cut into squares. Apply homemade butter, sprinkle red chilli powder and finely chopped fresh coriander leaves.

Serve Hot Baked Purple yam-Potato Handvo..with tomato sauce..or green coriander chutney.

Relish this Baked hot savoury...as evening snack...you can make with only mashed potatoes layers also.
