Ingredients

2 servings
  1. 4eggs
  2. 1 tintomatoes
  3. 2fresh chillis
  4. 1 teaspoonchilli flakes
  5. 1tbps hot sauce
  6. 1/2onion
  7. 2 clovesgarlic
  8. 3bacon strips
  9. 1 tbspoil
  10. Salt & pepper
  11. 2bay leaves
  12. Toast

Steps

  1. 1

    Chop onions, garlic, chillis, bacon

  2. 2

    Fry bacon strips in separate pan.

  3. 3

    Tbsp oil in pan. fry onions. Add garlic, chillis, chilli flakes, black pepper. Fry until ready. 7mins ish

  4. 4

    Add tin of toms, bacon, bay leaves, salt, hot sauce. Bring to boil then reduce to medium heat and stew for as long as possible. 20mins minimum.

  5. 5

    Use spoon to make wells in stew and crack eggs into wells. Cover pan and serve when eggs are cooked.
