Steps

Mix all the flours, pour hot oil, pinch of salt and make a soft dough by adding sufficient amount of water. Cover the dough and rest it for 30 minutes.

Grind til, khus khus and grated dry roasted coconut, keep it in mixing bowl.

Heat the ghee (approximately 1 tsp) in a pan on low flame, add besan and roast it till it turns little brown in colour and aromat. Switch off the gas. Let it cool down.

Then put that roasted besan in mixing bowl. Add gud and cardamom, nutmeg powder in the mixing bowl and mix it properly.

If stuffing appears dry, then add 2 to 3 tbs milk drop by drop and mix. Stuffing should be soft but not wet.

Take 2 small portion of dough and make a equal size of 2 small rotis and apply oil on one side of these rotis.

Now take a portion of stuffing and spread it on first roti. It should be spread uniformly upto the edges.

Now put the oiled side of second roti over this stuffing. Seal the edges.

Sprinkle the refined flour on the platform and roll it into the chapati.

Roast the stuffed roti on both side on heated pan(tawa) on a low flame. Roast it till the golden brown spots appear on it, apply little amount of ghee on both side. Keep it on plate and cool it.

Gud ki roti becomes crisp on cooling. Keep it in air tight container. The crispy gud ki roti is served with ghee.
