Stuffed Paneer Cheela Sandwich

#StuffedDelights - Here is an unusual way of serving your normal everyday cheela / pancake. Add some paneer stuffing and then grill on an open flame or in any sandwich maker. Healthy, wholesome and yummy, they are an ideal breakfast or brunch recipe. I have also added some mixed millets to make them more nutritious.

Enjoy along with tomato ketchup or any homemade chutney. You may relish as a tea-time snack, meal on the go, after school snack or as a lunch box meal. Choice is yours. Any other stuffing of your choice and / or cheese may be added.

Ingredients

  • Stuffing
  • 100 gmpaneer mashed
  • 1potato boiled and mashed
  • 2 tbspfried onion
  • 1-2green chilies chopped
  • 2-3 tbsp.coriander leaves chopped
  • to tastesalt
  • 1/2 tspturmeric powder
  • 1tomato chopped
  • 4-5 tbspcoloured bell peppers chopped
  • 1 tspsesame seeds
  • 1/2 tspchilli flakes
  • 1/2 tspgaram masala powder
  • 1 tsplime juice
  • pinchpepper powder
  • Cheela
  • 1 tbspeach of masoor, chana, urad, moong and tuvar dal
  • 1 tbspeach of foxtail, kodo and little millet
  • 1 tspginger garlic grated
  • 2green chilies chopped
  • to tastesalt
  • 1/2 tsp.turmeric powder
  • 1/2 tsp.garam masala powder
  • as neededoil to shallow fry
  • as neededSandwich
  • as neededbutter

Steps

  1. 1

    Stuffing - In a bowl. mix together all the ingredients and keep aside.

  2. 2

    Cheela - Soak the lentils and the milles in sufficient water for 5-6 hours. Grind along with some water to a smooth paste. Add rest of the ingredients and keep aside.

  3. 3

    Heat a non-stick tawa and brush with some oil. Pour a ladleful of the batter and spread it around into a circle.

  4. 4

    Drizzle some oil on the edges and cook on a low flame on both sides till light brown in colour. Transfer to a plate. Make similar cheela with the remaining batter.

  5. 5

    Sandwich - Grease a open flame sandwich maker and place one cheela. Put some of the stuffing in the centre and cover with another cheela.

  6. 6

    Close and grill on an open flame for 2 minutes on each side or till done. Allow it to cool before demoulding it. Make similar sandwiches and serve with some tomato sauce or any homemade chutney.
