Prepare the broth in advance by simmering pork or chicken bones, or use a vegetable broth. Soak the rice in cold water for about 2 hours. Add the rice to the broth and cook until soft.

Marinate the beef with a little soy sauce, pepper, and sugar. Dice the carrot, pumpkin, and green beans, then boil until tender and drain. Sauté garlic until fragrant, then quickly stir-fry the beef until just browned.

Add the vegetables to the pot of porridge. Gently stir and simmer for another 5 minutes over low heat. Season with fish sauce and other spices to taste, add the beef, then turn off the heat. Sprinkle with chopped green onions, cilantro, ground pepper, and fried shallots. Serve hot.
