Andean Herbs Chili Sauce

The Andes is home for some amazing herbs. Some of them, very strong flavored, others with a much more subtle flavor. This time we used Huacatay. This herb has an amazing strong flavor and is regularly found in neighborhood markets all around Peru.
The sauce is simple, very rich and tasty; and can be used as a dipping sauce or as a side with any kind of grilled cut. Great with Poultry, Pork and Fish. However you can also do beef and it will be very nice.

Steps

Wash the Huacatay Leaves with plenty of water and separate the stems.

Cut the Onion as shown in the picture.

Cut the Lime and extract the juice.

Cut the Chili as shown in the picture. If you want the Sauce spicy, add the seeds and veins to the blender. If not, just the yellow part.

Cut the Garlic Cloves in halves.

Put everything on a wok along with the Oil and Salt to taste. Cook it for 10 min at medium heat.

Add everything to the blender and blend.

Serve and enjoy!
