Sweet and spicy chilli sauce

This is a sweet yet spicy tomato sauce that I like to add to my chilli. You could put it on anything you wanted too really but it's a really good fit when mixed into a chilli I think. If you don't want the sweetness to it simply substitute the 9 roma tomatoes with 4 beefsteak tomatoes and leave out the brown sugar entirely. When prepping the peppers don't include the bell peppers' seeds into the mixture however, do include the habanero seeds.

Ingredients

about 30 mins
around 900ml
  • 1/2 cupPork fat or salted pork (or 1/4 cup olive oil)
  • 8 tbspunsalted butter
  • 1carrot
  • 1red bell pepper
  • 1orange bell pepper
  • 1stripped bell pepper
  • 1red chilli pepper
  • 2habanero peppers including the seeds
  • 5 clovesgarlic
  • 1yellow onion
  • 1celery stalk
  • 9roma tomatoes
  • 2 tbspfresh Thyme
  • 2 cupschicken stock (or veal stock)
  • 2 tbsporegano
  • 3bay leaves
  • 1/2 tbsppaprika
  • 1/2 tbspchilli powder
  • 2 tbspCreole seasoning
  • 2 tbspkosher salt
  • 2 tbsppepper
  • 1/2 cupbrown sugar
  • 4basil leaves
  • 1 tbsplemon juice
  • 3 tbspWorcestershire sauce
  • 32 oztomato paste
  • 1/4 cupcilantro
  • 1 cupshredded ghost pepper Monterey Jack cheese

Steps

about 30 mins
  1. 1

    Prep: chop carrot, tomatoes, garlic, onion, celery, habaneros, and slice the other peppers.

  2. 2

    Render down the pork fat with 6 tbsp of butter. If not using pork combine the butter and olive oil instead.

  3. 3

    Once melted or rendered add the carrots, peppers, garlic, onion, and celery. Saute for only 3-5 mins until glossy.

  4. 4

    Blend tomatoes in a blender on high till as smooth as possible then add to the pan.

  5. 5

    Then add thyme, chicken stock, oregano, bay leaves, paprika, chilli powder, Creole seasoning, salt, pepper, brown sugar, basil, lemon juice, and Worcestershire sauce. Bring to a boil and let boil until all sauce has turned a deep red color.

    Sieve the liquid into another pan.

  7. 7

    Add the tomato paste and the remaining 2 tbsp of butter.

  8. 8

    Add Ghost pepper cheese and cilantro. Then remove from heat and stir until butter and cheese are melted.

    Then you can add it to your chilli or anything else you want.
