Steps

Soak raw rice, urad daal, methi seeds for 5-6 hours. Grind to a smooth paste. Grind cooked rice to a smooth paste, mix both batter well add salt to taste. Add sugar. Sugar gives nice brown colour and crispness to dosa.

Boil potatoes. Mash it. In a pan heat oil add mustard, jeera, curry leaves and chillies. Add onions, salt and fry till translucent. Add turmeric powder and mashed potatoes. Cook for 2 minutes. Add chopped coriander leaves mix well and keep it aside.

Grind all the ingredients under chutney. With little water to a smooth paste. Keep it aside.

Spread dosa batter on hot tawa. Spread chutney on dosa. Apply butter all over the dosa. Roast on a medium flame. Place potato stuffing in centre of dosa.

Fold the dosa as shown apply butter roast nicely after folding.

Serve hot with coconut chutney and sambar.
