Sift maida in a flat bowl.Add 1 tbsp warm ghee,baking powder,little salt,kalonji, ajwain and little black pepper.Mix well and add water and make a tight dough.Add 2 tsp oil and knead again to make a smooth dough.

Cover and let it rest for sometime.Make 3 equal balls from the dough.Roll 1 ball and spread a mixture of cornflour and ghee evenly on it.Roll out another dough.Place this over the rolled out roti. Spread again the cornflour and ghee mixture over it.Repeat the process with the third roti.Place 3 rotis one on top of another and roll again to make it thin.Slowly fold this roti into a cylindrical tube.Lightly roll again in length.

Cut into pieces and flatten with hand.Then roll lightly 1/2" thickness.Heat oil and fry puris under low flame. Drain excess oil and when cool store in airtight container.
