In a skillet over heat, add onions, olive oil, garlic, spices, spinach, then ricotta cheese and Parmesan. Add herbs, fennel, and breadcrumbs or crushed bread afterwards.

After 20 minutes, place the mixture or filling in a dish to cool.

On a baking sheet, lay out the pastry, then half the spinach mixture, followed by the salmon, then the remaining mixture. Cover with pastry in the shape of a fish according to your decoration style and bake for 40 minutes. Serve with vegetables. Enjoy!
