An easy dish and personally one of my favorites, served during Ramadan on the Syrian table. I wanted to present it in a healthier way by replacing the fried eggplant in the original recipe with grilled eggplant. 👌🏻🔝😋

2.2 poundseggplant, sliced, fried or grilled as desired
2red tomatoes, finely chopped
1 bunchparsley, finely chopped
5green onions, finely chopped
Olive oil to taste
2 piecespita bread
1/4 cuplemon juice
1 clovegarlic, crushed
Salt to taste

Steps

In a large bowl, mash the garlic with salt, add the eggplant and mash well. Add all the ingredients: tomatoes, onions, parsley, bread, lemon juice, and olive oil, and mix well.

Serve the fattoush in a serving dish and garnish with parsley and pomegranate seeds or as desired. Enjoy! 🌹🌹🌹
