Fried chicken is one of my favourite comfort foods but I like eating healthy. This recipe uses ground almonds instead of flour, making it gluten- and grain- free, and requires no oil. Made without chilli and pepper, it’s also a great healthy alternative for chicken nuggets - kids love it.

Inspired by Hemsley & Hemsley’s Pablo’s Chicken, which uses a different mix of spices

Ingredients

  1. Coating mixture
  2. 1 1/2 cupground almonds
  3. 2-3 tbssweet paprika
  4. 1 tbseach of oregano, thyme, basil and / or herbs de Provence
  5. 1 1/2 tbsgarlic powder
  6. 1 tbsonion powder
  7. 1 tbsground ginger powder
  8. 1 tbscumin
  9. to taste Chilli, salt and pepper
  10. Chicken
  11. 6-8 pieceschicken (breast, thighs or wings)
  12. Other
  13. 2eggs

Steps

  1. 1

    Mix all spices in a bowl - taste to check if you like the mix. Add extra spices accordingly

  2. 2

    Mix spice mix into almond flour, stirring so it’s spread evenly

  3. 3

    Mix two eggs in a bowl

  4. 4

    Coat chicken in the eggs and then coat fully in spices.

    Arrange on a baking paper and cover with aluminium foil

  6. 6

    Bake for 20-45 min, depending on the size of the pieces (20 min for chicken nuggets, 45 min for whole thigh or breast). Remove aluminium foil half-way through so the coating gets crisp.

  7. 7

    Best enjoyed with fresh salad. Keeps well in the fridge for a few days and can be sliced and added to a salad to make it more substantial.
