High protein & full of antioxydants. Great in a sandwich or with raw veggies & pita crisps or crackers as a snack. You can make in advance and keep in the fridge for up to five days when left in an hermetic container.

Ingredients

4 servings
  1. 1 blockfirm tofu, cut in cubes (I used fine herbs flavored but you can use any you want)
  2. 2 cupsfresh kale or spinach leafs
  3. 4large tablespoon salad dressing (miracle whip or vegan type)
  4. 1/4 teaspoongarlic powder
  5. 1/4 teaspoonpaprika
  6. 1/4 teaspoonfresh ground pepper
  7. avocado oil or extra-virgin olive oil

Cooking Instructions

  1. 1

    Put tofu cubes & kale/spinach leafs in a food processor and pulse till everything is chopped

  2. 2

    Add salad dressing & spices and turn to high speed till everything is blended well

  3. 3

    If you feel texture is to pasty, add oil of choice a little bit at a time while at high speed till you get the texture you want (I had to add about 1 tablespoon of avocado oil)

    Serve and enjoy! 😊
