Drain the tofu and put in a medium bowl. Using a whisk, mash and mix until the tofu is fairly smooth.

Add the oil and soy sauce. Mix and adjust taste if needed.

Try adding fresh chopped herbs, lemon zest, smoked paprika, roasted garlic, etc, etc. For salad dressing, mix with a little vinegar or lemon juice. You can do a lot with this dip!
