Ingredients

  1. 1/2 cupred lentils
  2. 3 cupsvegetable broth
  3. 4 ozonion, 1/4” diced
  4. 4 ozcarrot, 1/4” diced
  5. 1 tbspminced garlic
  6. 2 tbsptomato paste
  7. 1 tspground cumin
  8. 1/8 tspcayenne pepper
  9. 1/2 ozfresh lemon
  10. 1/2 tsptarragon
  11. to tasteSalt

Cooking Instructions

  1. 1

    Sweat onions and carrots in a pot with one tbsp oil, 2 oz water, and 1/2 tsp of salt. When onions are clarified, add lentils, broth, garlic, tomato paste, cumin and cayenne. Bring to a boil over med-high heat. Lower heat and simmer, uncovered, until vegetables are very tender and lentils begin to fall apart, about 20 minutes. Squeeze in lemon and stir before serving
