    Peel and slice the potatoes into 1/4-inch thick rounds. Slice the onion into thin strips and place everything in an oven-safe glass dish. Add salt and olive oil, then bake at 350°F for 20-30 minutes.

    With about 5 minutes remaining, season the salmon with parsley and thyme, and quickly sear it in a pan, leaving the inside raw.
